One of my favorites was these soft  Maple Pecan Chocolate Chip Cookies, they remind me of a soft Chips Ahoy cookie, if Chips Ahoy made yummy pecan maple chocolate chip cookies.

I also really loved the Ancient Grain Cheddar Crisps, to me they tasted like Cheddar Sun Chips. They were so addictive, the bag disappeared way too fast. If you were to crush the crisps up and use them to crust some chicken tenders it would be amazing!

But really, you can’t go wrong with any of their products. I love their breads, cookies, bagels, muffins, and they even have cinnamon rolls complete with cinnamon icing (if you follow me on Instagram you probably saw me enjoying one.) I can’t wait to try more of their new products!

I saw this recipe on Something Swanky over the summer and the concept intrigued me. Make a pudding out of cake and fruit filling? That actually stays together? It was just weird, but it works! I thought this was just the time to use Udi’s Double Vanilla Muffins and some Cranberry Granola.

Gluten-Free Cranberry Pudding Cake

Ingredients (1 pudding cake (serves 8))
  • 4 Udi’s muffins
  • 1 1/2 c. fresh (or frozen) cranberries
  • 1 c. apple cider
  • 1/2 c. sugar
  • 1 tsp. ground cinnamon
  • 1/2 tsp. ground ginger
  • 1/2 tsp. vanilla extract
  • 2-3 c. whipped cream, lightly sweetened
  • 2-3 Tbs. chopped pecans (optional)
  • 2-3 Tbs. Udi’s Cranberry Granola (optional)
Instructions
Line a bowl with wax paper of plastic wrap, this will be your mold.
Slice each muffin into thirds or quarters and line the bottom and sides of the bowl( will take approx. 3 muffins, reserve 1 muffin for the bottom, if desired.)
In a saucepan over medium-high heat bring the cranberries, apple cider, sugar, spices, and extract to a boil, stirring occasionally. The cranberries will begin to pop (see the 3rd photo of the cranberries.) Continue to simmer until the filling is reduced by about half and the cranberries have broken down.
Pour the filling into the mold, on top of the muffins, and then top with the remaining muffins which will form the base.
Place another piece of wax paper or plastic wrap on top and weigh the pudding down with a small plate with something heavier on top. Refrigerate overnight, or 6-8 hours. The muffins will soak up the filling and everything will set up.
When ready to serve, unmold the pudding, top with whipped cream, and garnish with chopped pecans and granola.

Notes:

  • I over reduced my cranberry filling. If you don’t cook it down as much it will soak into the bread a little more. If you are wanting it to be all a nice red color just be careful not to reduce it as much. It will be delicious either way!
  • I used Udi’s Double Vanilla Muffins, but you could easily use another flavor. I thjnk the Harvest Crunch or Pumpkin would be delicious!
