Some days you just really need a brownie.
A really good fudgy gooey brownie.

Rich and fudgey gluten-free brownies, stuffed with ooey gooey caramel and studded with chocolate chips. You really have to have a nice tall glass of icy cold milk to help wash them down.




They can make the very worst days just a little better.
Unless you eat to many and then you get an awesome belly-ache. (How would I know that?)

Caramel Stuffed Brownies

Ingredients (9 big brownies (16 reg size))
  • 1 recipe {BEST} Gluten-Free Brownies batter, or your favorite brownie recipe
  • 1 c. unwrapped caramels or caramel bits
  • 2-3 Tbs.. milk (or water)
Instructions
Preheat the oven to 350F. Line a 8×8 square pan with parchment paper, or aluminum foil that is well greased.
Prepare the brownie batter according to the recipe directions.
In a microwave safe bowl combine the caramels or caramel bits and 2 Tbs of milk (or water) and microwave in 30 second increments and stir until it is all melted. You should have a fairly thick caramel sauce. (If it is way too thick to spread easily add the additional Tbs of liquid.)
Pour half the brownie batter into the prepared pan and spread evenly.
Spread the caramel on top of the brownie batter.
Carefully spoon the remaining brownie batter on top and smooth it out.
Bake for approximately 35-40 minutes, or until the top of the brownies are set, but still very gooey underneath.
Let cool before cutting.

Notes:

  • If you use a different brownie batter recipe the bake time will probably different. I found that the bake time increased a little bit from the original bake time due to the addition of the caramel.
  • I used Kraft Caramel Bits, which don’t have any wheat ingredients in them but cross contamination could be an issue for you if you are very sensitive. If that is the case try another brand of caramels or see the note below.
  • You can probably use a thicker homemade caramel sauce or store-bought caramel sauce. If you try it let me know how it turned out in the comments.
