One of the biggest obstacles to feeding my family healthy meals is prep time. It really is like running an obstacle course in the kitchen at 5pm. I don’t have time to chop lots of different veggies.  Mac and Cheese, cereal, or peanut butter sandwiches are just easy and OH so tempting.

I always have canned beans on hand (I currently have 3 drawers full of beans) and a few cans of vegetables. This month is National Canned Food Month and there are lots of sales on canned goods at Albertsons. It is the perfect time re-fill your pantry! With a good stock of canned food, a balanced meal is just moments away. Even with a child holding onto your leg.

This easy Tuscan 3 bean sausage soup recipe has 5 different cans in it. Cannellini beans, garbanzo beans, light kidney beans, sliced carrots, and diced tomatoes. Add half a diced onion, a little garlic, chicken broth, some sausage if you have it, and a handful of spinach. Dinner is on the table just as soon as you heat it through!

I like to dice up an onion at the begining of the week and keep it in the fridge  so I can add it to quick dinners just like this. If you already have diced onion you don’t even need to pull out your cutting board to make this Tuscan 3 Bean Sausage Soup recipe for dinner!

Ingredients
  • 2 tablespoons oil
  • ½ an onion, diced
  • 1 teaspoon minced garlic
  • approx 1 cup pre-cooked sausage, cut in pieces (2 brat-sized links) (I used apple chicken sausage, but a kielbasa or really any sausage would be great)
  • 1 (15oz) can diced tomatoes, rinsed and drained
  • 1(14.5oz) can sliced carrots, rinsed and drained
  • 1 (15oz) can cannellini beans, rinsed and drained
  • 1 (15oz) can garbonzo beans, rinsed and drained
  • 1 (15oz) can light kidney beans, rinsed and drained
  • 4 cups chicken broth
  • 1 cup fresh spinach
  • salt and pepper to taste
Instructions
  1. In a large saucepan or small soup pot saute the onion, garlic, and sausage until the onion is translucent and the sausage is browned.
  2. Add the canned beans and vegetables and the chicken broth. Bring to a simmer.
  3. Stir in the spinach just before serving.
  4. Salt and pepper to taste.
