Udi’s Soft & Chewy Snicker Doodle Cookies are actually the BEST gluten-free, store-bought cookies I’ve ever had. Just like the title states “Soft & Chewy,” I fell in love! I immediately gave a cookie to one of the harshest GF critics I know, and he said that they were “pretty good.” I don’t think he wanted to admit that something gluten-free was actually delicious.
Even though I happily would have enjoyed these Snicker Doodles in their original form, I’ve been watching The Next Iron Chef on Food Network and wanted to transform them.
These truffles do just that. All the same flavors, but in a cute little truffle, enveloped in white chocolate and sprinkled with cinnamon-sugar. Perfect for giving to your friends for the holidays. Or just eating them all by yourself.
If your truffles are well chilled before you dip them in the white chocolate, it will set up quickly. Sprinkle the cinnamon sugar on top immediately so that it will still stick.

- 8 Udi’s Gluten-Free Soft & Chewy Snicker Doodle Cookies
- 4 oz cream cheese, softened
- 1 ½ c. white chocolate chips, melted and slightly cooled (or vanilla candy coating)
- 1Tbs. sugar mixed with 1tsp. cinnamon
