This dairy free coconut chocolate shake will whisk you away to a tropical beach!
Today my husband and I are celebrating our 2nd anniversary. 2 years ago we honeymooned at an all-inclusive resort in Playa del Carmen, Mexico. I think it goes without saying that it was AMAZING! I did get food poisoning from beef carpaccio that I ate when we first arrived. I also got a whole mouthful of cold sores that kept spreading and spreading. But when I think about our honeymoon I don’t think about the food poisoning and the cold sores, I think about the food. It was amazing! One of the coolest things was the beach butlers.
We would be sitting on the beach, and a server would just walk up and ask us if we wanted anything to drink. My husband and I don’t drink alcohol so we got really creative with the non-alcoholic drinks. By that I mean the first thing we asked for was chocolate milk. We were pleasantly surprised when we were presented with a chocolate milkshake. Next we tried a coconut chocolate milkshake and spent the rest of the week trying variations on it. Coconut, chocolate and strawberry; coconut, chocolate and mango. They were all delicious!
As we are celebrating making it for 2 whole years I re-created that icy beverage we sipped on the white sandy beaches in Mexico and am sharing it with you.
- Add all ingredients EXCEPT the ice into the jar of your blender.
- Blend at medium-high speed and gradually add the ice cubes until your shake is nice and icy.
- Pour into your favorite glass, garnish with chocolate chips and shredded coconut (optional) and enjoy.
