I’m sure you are well aware of how difficult it can be to eat gluten free sometimes. Living a gluten-free lifestyle often means that you can no longer eat some of your favorite things without spending hours slaving away in the kitchen making everything from scratch.
Even though I am partial to spending hours in the kitchen I still sometimes wish that there were shortcuts that I could take on the days that I’m in a rush. That is why I love Udi’s Gluten-Free!
Udi’s has some great products that can help to speed things up when you are in a pinch. Or that are just yummy to snack on the way they are. There is also a piece of mind that comes from knowing that what you are eating is certified gluten-free. Udi’s just recently came out with some new products and they sent me some samples to review. Everything I’ve tried has been delicious! Udi’s products all have great texture and structure, especially for being gluten-free. (Just want to enter the giveaway? Enter here!)
One of my favorites was these soft Maple Pecan Chocolate Chip Cookies, they remind me of a soft Chips Ahoy cookie, if Chips Ahoy made yummy pecan maple chocolate chip cookies.
I also really loved the Ancient Grain Cheddar Crisps, to me they tasted like Cheddar Sun Chips. They were so addictive, the bag disappeared way too fast. If you were to crush the crisps up and use them to crust some chicken tenders it would be amazing!
But really, you can’t go wrong with any of their products. I love their breads, cookies, bagels, muffins, and they even have cinnamon rolls complete with cinnamon icing (if you follow me on Instagram you probably saw me enjoying one.) I can’t wait to try more of their new products!
I saw this recipe on Something Swanky over the summer and the concept intrigued me. Make a pudding out of cake and fruit filling? That actually stays together? It was just weird, but it works! I thought this was just the time to use Udi’s Double Vanilla Muffins and some Cranberry Granola.
The cranberry filling takes only a few minutes to make…

Then you top it off with some whipped cream and chopped pecans and Udi’s Cranberry Granola for a little crunch. The results are simply delicious!
- 4 Udi’s muffins
- 1 1/2 c. fresh (or frozen) cranberries
- 1 c. apple cider
- 1/2 c. sugar
- 1 tsp. ground cinnamon
- 1/2 tsp. ground ginger
- 1/2 tsp. vanilla extract
- 2-3 c. whipped cream, lightly sweetened
- 2-3 Tbs. chopped pecans (optional)
- 2-3 Tbs. Udi’s Cranberry Granola (optional)
- I over reduced my cranberry filling. If you don’t cook it down as much it will soak into the bread a little more. If you are wanting it to be all a nice red color just be careful not to reduce it as much. It will be delicious either way!
- I used Udi’s Double Vanilla Muffins, but you could easily use another flavor. I thjnk the Harvest Crunch or Pumpkin would be delicious!
