One of my friends on Facebook posted a few days ago that she had a great idea for a kitchen competition for moms. Competitors would have 30 minutes to make a simple and edible meal, with 2-5 kids running underfoot yelling and screaming for attention. A good meal would get you fewer kids the next round, and handicaps would give you more. At the end all of the competitors would get a $100,000 all expenses paid cruise, because after enduring that competition they would definitely deserve it!
I know sometimes that is how I feel about dinner. I’m scrambling to make something that my family will actually eat and that fits into our dietary restrictions. I’m always on the lookout for quick and easy dinner recipes.
But that is only half the battle. Just like in this theoretical cooking competition, you have kids in the kitchen with you. I almost always have my toddler “helping” me, which can sometimes make it hard to actually get dinner on the table. A great way that I get my daughter involved in the kitchen is to give her a task that she can actually do. Like stirring the mac and cheese. Or “cutting” some produce with a butter knife.
She loves helping me, and giving her something to do at her skill level makes her feel involved. She just beams when she tells her daddy, “I made dinner!”
I’ve also found that she is a much less picky eater if she helps prepare dinner. If she helped make it she is always excited to try it!
Cooking together is one of our favorite things to do, and I want to make sure that I keep doing it as Miss E gets older. Cooking together gives you a great opportunity to talk about what ingredients you are using, and helps your kids learn how to make their own nutritious food choices.
I love this Gluten-Free Mac and Cheese because it only takes 5 ingredients, and is on the table in well under 30 minutes. The noodles hold up great (which is often quite a feat for gluten-free pasta), the sauce is creamy, the chicken adds some protein and just a little zing!

- 1 box Horizon Organic Gluten-Free Macaroni and White Cheddar Cheese
- 2 tablespoons butter
- ¼ cup milk
- ½ cup diced cooked chicken
- 1 tablespoon gluten-free buffalo style hot sauce
- Cook and drain the pasta according to the package directions.
- Add the butter, milk, and cheese packet according to the package directions.
- In a separate bowl toss together the diced cooked chicken and the hot sauce until the chicken is evenly coated.
- Add the chicken to the macaroni and cheese and stir briefly until just combined.
You can easily double this recipe to make enough for the whole family.
