to the party! It doesn’t matter if your sweetie this year is a spouse, romantic interest, child, or friend. These gluten free raspberry chocolate truffle brownie bombs are a hit all around!
Whether you make them to share, or just for yourself, they are sure to satisfy your sweet tooth.
Ever since I saw my friend Hayley’s Chocolate Chip Cookie Dough Brownie Bombs (and all of her other Brownie Bombs too!) I have wanted to make some gluten free brownie bombs of my own.
With Valentine’s day coming up I thought what better flavor for my first Brownie Bomb than something with raspberries? I love the vibrant red color and the gentle sweetness of raspberries. They go perfectly with chocolate, and are so festive and colorful.
These gluten free raspberry chocolate truffle brownie bombs are super easy to make too! I started off with Canyon Bakehouse’s Gluten Free Brownie Bites (they are dairy free too!) so these brownie bombs are actually no bake! I am a “fudgy brownie” kind of girls and these Brownie Bites have everything that I am looking for. Great chew, not too sweet (but sweet enough), and a great chocolate flavor!
To keep my gluten free brownie bombs dairy free too I used a dairy free semi-sweet chocolate with full-fat coconut milk for the truffle filling. I used the same chocolate with a little coconut oil to make my own dairy free chocolate candy coating too. The addition of just a little coconut oil helps the chocolate to evenly coat the gluten free raspberry chocolate truffle brownie bombs and also helps it to set up smooth and shiny.
All you have to do it make a “thumbprint” in each gluten free brownie bite and then add a little chocolate truffle filling and a fresh raspberry then sandwich 2 gluten free brownie bites together. A quick dunk in the melted chocolate to coat, and then you can top your brownie bombs with a fresh raspberry or sprinkles. Or both! There is plenty of room for you to customize your gluten free brownie bombs and make them just the way you want.
I made another version of these gluten free raspberry chocolate truffle brownie bombs with white chocolate truffle filling. Of course, the white chocolate filling wasn’t dairy free, but I figured any/all white chocolate lovin’ dairy eaters would enjoy them. I can’t decide which version I liked better! You really can’t go wrong with either.
One of my nieces has to eat dairy free. We were going to a family birthday party at Chick Fil A the day that I made these gluten free brownie bombs. I brought some of the dairy free gluten free raspberry chocolate truffle brownie bombs for my niece so that she would have a treat to eat while everyone else had birthday cake. As she was walking around eating her gluten free raspberry chocolate truffle brownie bombs she got several looks from people in the restaurant, disappointed that there weren’t brownie bombs for them to eat too.

If dairy-free isn't a concern you can use regular semisweet chocolate instead of the dairy-free chocolate and use cream instead of the full fat coconut milk. I still recommend using the coconut oil because it helps the chocolate coating to be smooth and set up shiny and firm. Alternatively, you could use a chocolate candy coating to dip the brownie bombs. You can easily half this recipe, or adjust it to make just the number of brownie bombs you want. 2 packages of Canyon Bakehouse Brownie Bites makes 9 brownie bombs, but if you only have one package half the filling and make 4 Brownie Bombs. Then eat the leftover Brownie Bite. 🙂Recommended Products
