It is 5 o'clock. Dinner needs to be on the table in just a few minutes. There is a kid clinging to your leg insisting that they are starving. The fridge is barren. How are you going to feed you family? This is when you really NEED your fairy godmother to come down and say bippity boppity boo.
If you are anything like me, you find yourself in that situation at least once a week every night. It is a little ironic since I am a food blogger. I mean, my job is basically to make food for my family and then share the recipe with you.
Honestly, I really struggle to come up with balanced healthy meals to feed my family. I look in the fridge and my mind goes blank.
It doesn't help that my girl's current winter bed-time is 6pm. At 4:30 I haven't really even started to think about dinner yet. And then it is 5 and we need to be already eating or we will have a couple cranky monsters on our hands.
One of the biggest obstacles to feeding my family healthy meals is prep time. It really is like running an obstacle course in the kitchen at 5pm. I don't have time to chop lots of different veggies. Mac and Cheese, cereal, or peanut butter sandwiches are just easy and OH so tempting.
Using canned beans and veggies really cuts down on dinner prep time. Having a well-stocked "cantry" is key to me feeding my family better foods on those busy nights when we need dinner NOW. I always have canned beans on hand (I currently have 3 drawers full of beans) and a few cans of vegetables. This month is National Canned Food Month and there are lots of sales on canned goods at Albertsons. It is the perfect time re-fill your pantry! With a good stock of canned food, a balanced meal is just moments away. Even with a child holding onto your leg.
This easy Tuscan 3 bean sausage soup recipe has 5 different cans in it. Cannellini beans, garbanzo beans, light kidney beans, sliced carrots, and diced tomatoes. Add half a diced onion, a little garlic, chicken broth, some sausage if you have it, and a handful of spinach. Dinner is on the table just as soon as you heat it through!
I like to dice up an onion at the begining of the week and keep it in the fridge so I can add it to quick dinners just like this. If you already have diced onion you don't even need to pull out your cutting board to make this Tuscan 3 Bean Sausage Soup recipe for dinner!
You can skip the sausage if don't have some on hand or if you want to keep the soup vegetarian friendly. Be sure to use vegetable broth instead of chicken if you are making Tuscan 3 bean soup for plant-based eaters.

Tuscan 3 Bean Sausage Soup Recipe
This hearty Tuscan 3 Bean Sausage Soup Recipe comes together in just a few minutes with very little prep time. It makes a perfect dinner for a busy weeknight.
Ingredients
- 2 teaspoons oil
- ½ an onion, diced
- 1 teaspoon minced garlic
- 1 cup pre-cooked gluten free sausage, cut in pieces
- 1 (15oz) can diced tomatoes, rinsed and drained
- 1(14.5oz) can sliced carrots, rinsed and drained
- 1 (15oz) can cannellini beans, rinsed and drained
- 1 (15oz) can garbonzo beans, rinsed and drained
- 1 (15oz) can light kidney beans, rinsed and drained
- 4 cups chicken broth
- 1 cup fresh spinach
- salt and pepper to taste
Instructions
- In a large saucepan or small soup pot saute the onion, garlic, and sausage until the onion is translucent and the sausage is browned.
- Add the canned beans and vegetables and the chicken broth. Bring to a simmer.
- Stir in the spinach just before serving.
- Salt and pepper to taste.
Notes
You'll need about two brat-sized links of sausage. I used apple chicken sausage, but a kielbasa or really any sausage would be great. Double check that it is gluten free.
