I decided to make some fun summer-inspired grilled gluten free pizzas: spinach artichoke and barbecue chicken.

How do you choose between premade gluten free pizza crusts and making your own gluten free crust?
For me, grilled gluten free pizza is a fun summer dinner when I don't want to hang out in the kitchen, I want to be outside.
I don't want to be in the kitchen making homemade gluten free pizza crusts!
Having a few gluten free store-bought pizza crusts on hand can help you quickly make dinner in your back yard.
There is little fuss!
All you have to do is open your gluten free pizza crusts, top them with your favorites, and then grill them until the cheese is melted and the toppings are hot.
We used Schar's gluten free pizza crust. It is one of my go-to store-bough pizza crusts because it is readily available, and has a nice crust on the edge to help keep your toppings in place. I like to keep a few on hand for impromptu pizza nights.
If you don't overcook your Schar pizza crust, it has a little chew in the crust and a crisp bottom! I much prefer it to other premade gluten free pizza crusts I've purchased.
There are two pizza crusts in each package, which is perfect because we usually make two pizzas for our family. They are individually wrapped, so if you only want one pizza the second gluten free pizza crust will stay fresh for later.
Schar's gluten free pizza crust is also dairy free. You can make a dairy free pizza if you use vegan cheese and dairy free pizza toppings. I made my dairy-intolerant daughter her own pizza, with her favorite toppings.
If you've baked gluten free for awhile, you know that most gluten free batters and doughs are pretty wet.
This can make something like grilling pizza a special challenge. Having the grill very hot will help the wet dough set before oozing between the grill grates. You may also want to use a silicone grilling mat, or a pizza stone.
If you want to make your own gluten free pizza crust, I recommend my friend Chrystal's gluten free pizza crust recipe. Chrystal recommends using a pizza stone on the grill for best results.
Which toppings do you use for gluten free grilled pizza?
Once you choose your gluten free crust, top your pizza however you'd like. I wanted to make a spinach artichoke pizza with alfredo sauce and roma tomato, and also made a barbecue chicken pizza because it is one of my husband's favorites.
You can use anything you want as a topping!
Double check sauces, and other ingredients to make sure they are truly gluten free.
Start by brushing the edge of your pizza crust with olive oil, then lightly spread your sauce of choice, and then add your toppings evenly.
To make a grilled gluten free spinach artichoke pizza you'll need:
- Olive oil, to brush the crust.
- Alfredo sauce. Some bottled alfredo sauces are gluten free, but not all are so double check the ingredients.
- Fresh spinach.
- Garlic, chopped.
- Artichoke hearts, I used a can of quartered artichokes, drained and patted dry.
- Roma tomato, sliced and patted dry.
- Provolone cheese.
- Mozzarella cheese.
To make a grilled gluten free barbecue chicken pizza you'll need:
- Olive oil, to brush the crust.
- Barbecue sauce, double check it is gluten free (not all are).
- Red onion, sliced.
- Grilled chicken, sliced or chopped into bite-sized pieces.
- Provolone cheese.
- Mozzarella cheese.
How do you grill gluten free pizza?
Once your pizza is topped, it is time to grill.
The most important things to consider when grilling gluten free pizza (or any pizza) are:
- Even heat. Evenly heating your grill will prevent hot spots, or cold spots so your gluten free pizza finishes cooking at the same time.
- High heat. You want your grill to be maintain 400°f inside the entire time you are grilling your gluten free pizza.
- Don't burn the crust. Depending on how far your away your heat source is from the crust, you may want to consider indirect heat. When using my charcoal grill, the coals were too hot and inconsistent for me to grill my pizza directly over the coals. I grilled it over the coals for a few minutes, and then moved it to the other side of the grill, using the grill as an oven. If you are using coals, have some extra coals ready to help keep your grill hot!

I love how our Schar gluten free grilled pizzas turned out! I did run into problems with burning the bottom, because I had some hot spots at first. But it still tasted great!

Spinach Artichoke Gluten Free Grilled Pizza
Gluten free grilled pizza topped with spinach, artichokes, tomatoes, garlic, alfredo sauce, provolone, and mozzarella cheese.
Ingredients
- 1 Schar Gluten Free Pizza Crust
- 1 tablespoon olive oil
- ¼ cup Alfredo sauce
- ½ cup Fresh spinach
- 1 teaspoon garlic, chopped
- ½ cup artichoke hearts
- 1 Roma tomato, sliced and patted dry
- ½ cup Provolone cheese
- ½ cup Mozzarella cheese
Instructions
- Heat your grill on high for at least 15 minutes. You want your grill to be about 400°f.
- Start by brushing the edge of your pizza crust with olive oil, then lightly spread your alfredo of choice, and then add your toppings evenly.
- Place your topped pizza on the grill, turning it every 3-5 minutes to cook it evenly. *see directions above.
- Cook until the cheese is melted and bubbly, about 10-15 minutes, depending on your grill and how hot it is.
