I've always loved peanut butter no bake cookies. My mom made them for a picnic when I was a kid, and I fell in love.
Just something about the chewy oats, crisp sugar crystals, and nutty peanut butter make a winning combo, that always brings me back to the paper-plate full of no bake cookies on the grass for my sister's backyard preschool graduation.
How do you make gluten free no bake cookies?
This gluten free no bake cookie recipe is quick and easy.
I like to make my gluten free no bake cookies with peanut butter, but you can use sunflower seed butter, or another peanut butter alternative to make peanut free no bake cookies.
You need about 10 minutes, and a sauce pan and a handful of gluten free pantry staples to make no bake gluten free peanut butter oatmeal cookies.
- Add the sugar, coconut oil, and milk to the saucepan and bring to a simmer.
- Once it simmers, set the timer for 2.5 -3 minutes.
- Quickly remove from heat, stir in the vanilla and peanut butter (or SunButter, or other peanut butter alternative) and mix until smooth. If the starts to separate, or gets too thick, put it back on low heat for a minute.
- Stir in your gluten free oats, and quickly scoop your peanut butter no bake cookies onto parchment or wax paper before they set.

Yes, you can make gluten free no bake cookies without peanut butter!
You can use sunflower seed butter, soy nut butter, almond butter, or any seed or nut butter that is safe for your family.
I actually made this batch of no bake cookies peanut free, using SunButter.
Do no bake cookies have gluten?
No bake cookies have gluten, unless they are specially made with gluten free oats.
Are oats gluten free?
By nature, oats are gluten free. However, this doesn't mean that the oats you buy at the store are gluten free.
Usually, oats are not gluten free, and not safe for someone with celiac disease because they are processed on the same machinery or co-mingle in the fields.
The gluten free oats I rely on are Zego's Exceptional Oats and GF Harvest Oats.
Both are purity protocol, meaning they are grown in dedicated fields, and handled with dedicated machinery. They are also both tested to ensure they are under 20ppm of gluten.
I've used both Zego Exceptional Oats and GF Harvest Oats in this recipe. If you use Zego Exceptional Oats, you may need a little bit less because they tend to absorb moisture more.
How do you make no bake cookie vegan?
You can make no bake peanut butter cookies without butter! My old favorite gluten free no bake peanut butter cookies are made with honey and butter, which both aren't vegan.
Instead of butter, I use coconut oil or palm shortening in this recipe.
I reduced the amount of coconut oil and palm shortening, compared to the amount of butter I originally used.
Butter isn't 100% fat (having a little water and milk solids left behind), but coconut oil and palm shortening are pretty close to 100% fat. If I used the same amount, the finished cookies would be greasy.
The honey was used to prevent the sugar from over-crystalizing while you simmer the sugar mixture. Instead of using honey, I carefully time the mixture and simmer it a little bit less.
How do you make no bake cookie with chocolate and peanut butter?
To make gluten free chocolate peanut butter no bake cookies I add a little cocoa powder and adjust the liquids and other dry ingredients so your no bake chocolate peanut butter oatmeal cookies aren't dry.
The cocoa powder absorbs moisture, so you have to adjust the other ingredients so your finished peanut butter chocolate no bake cookies have the right texture.

Vegan Gluten Free No Bake Cookies
Quick & easy gluten free no bake cookies made with sunflower seed butter or peanut butter.
Ingredients
- 1 cup white sugar
- 3 tablespoons coconut oil
- ¼ cup coconut milk
- ¼ teaspoon vanilla extract
- ½ cup sunflower seed butter
- 1 ¾ cup gluten-free rolled oats
Instructions
- Line 2 baking sheets with silicone baking mats, parchment paper, or wax paper.
- In a small/medium saucepan combine the sugar, coconut oil, coconut milk, and heat until it comes to a boil, stirring occasionally. Once it comes to a boil, continue to let it bubble and set the timer for 2 minutes 30 seconds.
- Remove from heat and add the sunflower seed butter and vanilla and continue to stir until the SunButter is melted and combined. If it gets too thick, place it back over low heat for a minute.
- Add the oats and stir until they are evenly coated.
- Scoop the mixture onto the prepared baking sheets using a 1 ½ Tablespoon cookie scoop. Gently flatten teach cookie with the back of your scoop or a spoon. Grease lightly, if the spoon sticks.
- Let the cookies sit undisturbed until they set. If it is really hot you can speed the process up by popping the cookies in the fridge or freezer.
Notes
Make sure you use gluten free oats that are purity protocol. Many gluten free oats, even those that are certified, may not be safe for those with celiac.
To make with dairy, use ¼ cup of butter and ¼ cup of milk.
To make with peanutbutter, use ½ cup of creamy peanut butter instead of the Sunflower Seed Butter.

Gluten Free Vegan Chocolate No Bake Cookies
Quick & easy gluten free chocolate no bake cookies.
Ingredients

- Line 2 baking sheets with silicone baking mats, parchment paper, or wax paper.
- In a small/medium saucepan combine the sugar, coconut oil, coconut milk, and cocoa powder and heat until it comes to a boil, stirring occasionally. Once it comes to a boil, continue to let it bubble for exactly 3 minutes while stirring occasionally. (for slightly fudgier cookies set the timer for 2 minutes 30 seconds).
- Remove from heat and add the sunflower seed butter and vanilla and continue to stir until the SunButter is melted and combined. If it gets too thick, place it back over low heat for a minute.
- Add the oats and stir until they are evenly coated.
- Scoop the mixture onto the prepared baking sheets using a 1 ½ Tablespoon cookie scoop. Grease the back of your cookie scoop and use it to make an indentation in each cookie to form a birds nest.Quickly add candy eggs to decocrate your birds nest cookies.
- Let the cookies sit undisturbed until they set. If it is really hot you can speed the process up by popping the cookies in the fridge or freezer.
