How to make tomatillo pork tacos in an Instant Pot?
I'm super excited about this instant pot tomatillo pork taco recipe from Megan's cookbook.
You make the sauce in the blender, and pour it over your pork roast, and let it cook in your pressure cooker. It is that easy!
My kids love pork tacos, and they make a regular appearance on our menu, but I've never made tomatillo pork tacos before!
My go-to pork braising liquid for tacos is hard cider (which is what I did in my Instant Pot pulled pork and green chile tacos) but making a quick homemade sauce with tomatillos and lime really ups the ante.

Instant Pot Tomatillo Pork Tacos
Instant Pot Tomatillo Pork Tacos- Juicy pork in a homemade tomatillo sauce made in the blender, is all cooked together in an electric pressure cooker to make a quick and easy gluten free dinner.
Ingredients
Instant Pot Tomatillo Pork
- 1 teaspoon salt, plus more to taste for seasoning
- Pepper, for seasoning
- 1 (2- to 3-lb [905-g to 1.4-kg]) pork roast
- 2 tablespoon (30 ml) olive oil
- ½ lb (335 g) tomatillos, husked and quartered
- 1 red onion, roughly chopped
- ½ jalapeño pepper, seeded
- 6 cloves garlic, minced (about 1 tablespoon [10 g])
- ½ cup (120 ml) chicken broth (or ½ cup [120 ml] water + 1 teaspoon chicken bouillon powder)
- ½ cup (20 g) fresh cilantro
- 3 tablespoon (45 ml) fresh lime juice
For Serving
- Warmed corn tortillas
- Guacamole
- Thick & Creamy Refried Beans (page 84 in An Allergy Mo's Lifesaving Instant Pot Cookbook)
- Fresh cilantro
Instructions
- Salt and pepper your pork roast generously on both sides. Cut the roast into 6 equal pieces. Place the pork in your Instant Pot.
- In a high-quality blender or food processor, combine your olive oil, tomatillos, red onion, jalapeño, garlic, broth, salt and the cilantro. Blend until everything is smooth. Pour the blended sauce onto the meat.
- Close the lid and move the valve to sealing. Use the pressure button to set your Instant Pot to high pressure. Hit manual and hit the plus and minus buttons to reach 60 minutes.
- When the timer is done, remove the meat from the pot. Carve off the fat and discard it. Shred the rest of the meat.
- Before returning the meat to the pot, remove all but 1 cup (235 ml) of the remaining juices. Stir the meat and the remaining cup of juices together. Add the lime juice. Taste, and adjust the salt and pepper to your liking.
- Serve the meat and a little juice in the middle of a warm corn tortilla topped with your favorite toppings.
Notes
Tip from Megan: "You’ll notice that I always mention chicken bouillon. I prefer to use Orrington Farms Broth Base & Seasonings, which comes in a vegan version as well. I like to use this for the consistency, as well as the fact that I use broth a lot and I hate to keep all of those cartons of liquid. Plus, many liquid and bouillon bases have wheat and dairy in them. "
