I will always remember the first time I had chicken wings. I was on one of my first dates with my husband. We had gone to watch a friend of his dad's play drums in a band. I remember when he picked me up. He showed up on the doorstep in a cowboy hat and black shirt with white pipping! While the band was playing my (now) husband spontaneously asked me to dance. We got hungry and ordered 20 chicken wings to share. Halfway through eating them we decided to have a eating contest. I COULD of beaten him, but I was a little bit self conscious and didn't want to get my face too messy. Later, my husband told me that he was testing me. I guess I passed the test.
That was the first time I had chicken wings. I couldn't believe I had never had them before. I have loved them ever since. I had tried making them a few times without much success. I couldn't get the skin to be crisp enough, they always seemed to end up soggy. The secret is to fry the wings. Un-breaded they do not soak up extra oil, and they are just delicious! Start frying the wings and then you can mix up the sauce. The first batch will be ready to eat in less than 30 minutes!
For the Wings
- 3 lbs chicken wings, split at the joint and wing tips removed
- Oil for frying
For the Sauce
- ¼ c. honey
- ¼ c. apple cider vinegar
- 3 chipotle peppers in adobo sauce (from the can)
- 1 ½ Tbs. adobo sauce (from the can of chipotle peppers)
- 2 Tbs. butter, melted
