Gluten Free Blossom Cookies with Sunflower Seed Butter- Peanut Free

I’ve always loved peanut butter blossom cookies! I’m a sucker for peanut butter cookies, especially when some chocolate is involved.
I mean, Reese’s are my favorite candy of all time.
In addition to being from a family of celiacs, I have a sister with an anaphylactic peanut allergy. In an effort to keep her safe, we switched to sunflower seed butter in our home.
I've been slowly adapting my favorite recipes to be peanut free. (Like those gluten free peanut butter bars I scared my sister with. Here is my SunButter Bar recipe.)
These gluten free blossom cookies without peanut butter took a few tries to get right. I first made them before Christmas (because they are a great Christmas cookie!) and they were a mega fail.
The problem was that I added too much baking soda and too much egg. I had thin crispy pancakes with a kiss standing in the middle.
Not what I was going for, but still tasty.
Life got busy, and I had a half a bag of kisses sitting on my counter for more than a month.
When the kids had a day off of school, we made another peanut-free blossom kiss cookie attempt. This time, they were a huge win!
The perfect crisp edges, and chewy center.
A few tricks to perfect Flourless Sunflower Seed Blossom Cookies:
- I used creamy SunButter. I’ve found that these cookies don’t work as well with the all-natural or Organic SunButter because the oils tend to seep out.
- If your family is dairy free, use Enjoy Life Foods Choco Boom Bars or Mini Chocolates instead of the kisses. The cookie dough is naturally dairy free, the only dairy is in the kisses. Since my daughter is sensitive to dairy I made a few cookies topped with chocolates that were safe for her. She ate them before I could grab a picture!

Sunbutter Cookies
Gluten Free Sunflower Seed Blossom Cookies without Peanut Butter are my flourless, peanut-free version of the classic kiss cookies, without peanut butter!
Ingredients
- 1 cup creamy sunflower seed butter (I used Creamy SunButter)
- 1 tablespoon vegan butter
- ½ cup brown sugar
- ½ cup white sugar
- 2 eggs
- 1 teaspoon vanilla extract
- ÂĽ teaspoon baking soda
- 24 Kisses or dairy free chocolate candies, to top
Instructions
- Preheat the oven to 350°f. Line a baking sheet with a silicone baking mat or parchment paper.
- In a mixing bowl, cream together the sunflower seed butter, vegan butter, brown sugar, and white sugar.
- Add the eggs, vanilla, and baking soda and mix until smooth.
- Scoop the cookie dough using a 1 ½ tablespoon cookie scoop. Roll each scoop into a ball and place on the prepared baking sheet, at least 3 inches apart.
- Bake for 8-10 minutes, or until the cookies lose their doughy shine. They will still be soft.
- Remove from the oven and immediately press a kiss or chocolate candy on top of each cookie.
- I think I got about 24 cookies. The kids ate them quick so it was hard to count!

Do you need to refrigerate these? Bc I could not roll the dough into balls at all they all turned out flat. I think I might've done something wrong.

Hi Bre,
I want to try and help you figure out what happened. What kind of sunbutter did you use? I've had that happen if I ever try to use the natural sun butter, I had best results with the creamy or crunchy, that is stabilized with some extra fats (it doesn't require stirring).
If your kitchen was extra hot, that could also be the problem. The other things that could cause the dough to be too soft would be if you used extra large eggs, or didn't use enough sugar.
I don't believe I refrigerated the dough, but if your dough ever seems too soft, a quick chill can make a big difference in preventing flat cookies.

I'm just seeing this! Lol I used the sun butter creamy I believe and I think I did use extra large eggs. The following year I tried these again and just threw them in the fridge for about 10 mins and they turned out better. This year I'll try not using extra large and the crunchy seed butter! Thank you for responding.

LOL about the crispy pancakes with the kiss in the center! That actually sounds good since I like love crisp cookies. Of course, the blossom cookies are always a favorite at my house. (The rating only showed 4.5 stars...but it should have been 5...love these cookies!)

You need to add Vitamin C (ascorbic acid) powder to this recipe, or the sunbutter will turn bright green a couple hours or a couple days after baking. The chlorophyll in the seeds will react with the baking soda and egg. It is a great trick at St. Pat's Day, but not any other time of year.

Made these without chocolate as we didn’t have any on hand. The cookies came out beautifully. They browned just around the edges when they were done and were delightfully crisp, yet soft and chewy in the center. My SO said he thinks he prefers them to peanut butter cookies!

Do you think egg could be substituted with a flax “egg”?

Hi Tina,
I haven't tried this recipe with any egg substitutes so I'm not sure exactly how it would work. I think it would probably work, but you may need to adjust the recipe slightly to add more/less flax egg, or adding some extra sugar. When testing this recipe, I had to be careful with adding enough egg to bind the sunflower seed butter and sugar without separating it, or making it runny.

Have you tried them with almond butter before? We have a sunflower and peanut allergy in our home.

Hi Amanda, I don't think I've tried them with almond butter, but I suspect it will work! I've had best results using the non-natural butters that have extra fat to stabilize them. -Brianna

Do these turn green at all? I made some sun butter cookies and within hours they were bright green. Not sure how to bypass that but I don't want to serve others green cookies as they looked moldy lol

Hi!
The reason things with sunflower seed butter turn green has to do with a chemical reaction between the sunflower seed butter and baking soda. I actually took these photos a day or two after I baked them. I used as little baking soda as possible, and they only started to turn a little green after a few more days. Just be careful when measuring your baking soda, if you use too much they will turn green.
