Yay ICE CREAM! I love making no-churn ice creams. They are so simple and they are so creamy and rich. My mom prefers my no-churn ice cream to normal churned ice cream. I've tried to explain to her that I didn't invent no-churn ice cream, but she still just thinks it is the coolest thing ever, so I'll take it. This no-churn ice cream has chunks of my favorite gluten free brownies folded in, with a sweet swirl of homemade cream cheese frosting. It tastes just like those perfect cream cheese frosted brownies, just cooler and icy.
My friend Katie over at Clarks Condensed is expecting a baby boy this month! Katie and her husband Forrest already have a son who is about the same age as Miss E. I've been really excited for Katie! I love having 2 of a kind, it makes everything really fun. I love watching my girls play together, and you know, hand-me-downs.
I first "met" Katie back in 2012 when I participated in the first year of the Online Blog Con #OBC15. Her son has some allergies and food sensitivities, so we've shared recipes and she even participated in the blog tour for my cookbook, The Essential Gluten-Free Cookie Guide.
I've gotten together with some other OBC15-ers to throw a SURPRISE virtual baby shower for Katie! And this gluten free cream cheese brownie ice cream is what I'm bringing to the party.
It is no secret that I LOVE ice cream. I've posted plenty of no-churn ice cream recipes here on Flippin' Delicious. Ice cream is definitely one of my favorite desserts. One of my favorite ice creams from my gluten eating days is the Cheesecake Brownie ice cream from Ben & Jerry's. Of course, I can't eat that now. Well, this gluten free cream cheese brownie ice cream recipe has all of the flavors that I loved in that sinful frozen pint.
Congrats to Katie! I hope her labor and delivery goes as smooth as possible. And hopefully a lot quicker than mine.

Gluten Free Cream Cheese Brownie Ice Cream
Creamy no-churn Gluten Free Cream Cheese Brownie Ice Cream with swirls of homemade cream cheese frosting and fresh baked gluten free brownies. The perfect way to end the summer and celebrate!
Ingredients
- 2 cups heavy whipping cream
- 1 14oz can sweetened condensed milk
- 1 teaspoon vanilla
- 2 cups gluten free brownies chopped into small chunks
- 1-1 ½ cups homemade cream cheese frosting
Instructions
- In a stand mixer, or with electric hand mixer, whip the cream to soft peaks.
- Stir in the sweetened condensed milk and vanilla extract.
- Mix in ½ - ¾ of the and brownie chunks.
- Add the cream cheese frosting and give it 2-3 slow folding stirs to marble the frosting in.
- Pour the ice cream into a loaf pan and top with the remaining brownie chunks.
- Pop in the freezer for at least 8 hours.
Notes
You can use whichever gluten-free brownies you want, my recipe or a different one. The same goes for the cream cheese frosting.
