Especially if it is a heaping bowl of chicken soup. Or in this case, gluten free chicken soup with dumplings, a.k.a. gluten free chicken and dumplings.
Whatever you call it, your toes will be warm and your soul filled with every bite.
How do you make gluten free dumplings?
Making gluten free dumplings is as easy as mixing together the ingredients to make a thick batter and scooping it into simmering soup to cook.
The gluten free dumplings are really easy to make too. I just whisked the ingredients together and used my spring loaded cookie scoop to drop them onto the top of the chicken soup.
The dumplings were soft and fluffy, and my favorite part of my bowl.
Ingredients to make gluten free dumplings:
- Gluten free flour
- xanthan gum, if your flour doesn't already have it. Omit it if you are using a gluten free flour that already has xanthan gum in it. The xanthan gum simulates the structure that gluten gives regular flour.
- Baking powder, this helps your dumplings be soft and fluffy. No one wants dense dumplings!
- Salt, because salt equals flavor
- Milk or dairy free milk
- one egg, or egg replacer, to help bind your gluten free dumplings
How to shape gluten free dumplings
Making gluten free dumplings is surprisingly easy!
Simply whisk the gluten free flour, baking powder, salt, milk, and egg together to make a thick batter/very loose dough.
Scoop your gluten free dumplings into simmering soup, and cover while they steam and cook through about 15 minutes.
Using a spring loaded scoop will give your guten free dumplings the perfect shape, even though you are working with a very soft dough.
Just don't stir your soup until the dumplings have set, or they'll fall apart!

To make gluten free chicken and dumplings you'll need
- diced onion
- diced celery
- diced carrot (you can use frozen mirepoix instead of the onion, celery, and carrot individually)
- diced potatoes (you can use frozen southern-style hashbrowns from the frozen section, most are gluten-free but be sure to double-check the ingredients.)
- Chicken
- Water
- gluten free flour
- egg
- milk
- salt
- baking powder

Making chicken and dumpling soup is as easy as making a simple chicken soup and then scooping gluten free dumplings on top of the soup while it is simmering.
How to use Instant Pot to make chicken and dumplings
Using your Instant Pot to make this gluten free chicken and dumping recipe means you can have it on the table in about an hour, start to finish, instead of spending all day simmering soup o the stove.
An Instant Pot makes it super easy to sear meat or sauté veggies BEFORE pressure or slow cooking IN THE SAME PAN.
When using my slow cooker, I always hated pulling out a skillet to sear meat before cooking it, so I would usually skip it.
Now, I love building layers of flavor in my Instant pot pressure cooker before I set and forget my dinner.
Sautéing onions, celery, and carrots to make a homemade chicken stock (in less than an hour) is so easy now, and doesn’t make any extra dishes!
Then you can just add the chicken and some water on top.
I love that my Instant Pot helped me make this from scratch gluten free chicken and dumplings recipe in less than an hour and a half.
I will admit that I used the quick release. If you let the pressure come down naturally it will take a little longer.
I waited to stir the peas and carrots in until after the dumplings were cooked because I didn’t want them to lose all of their color.
I just made sure they were thoroughly thawed by heating them slightly in my microwave. You can also stir them in as soon as you finish releasing pressure on your pressure-cooker, they'll quickly thaw and cook in the hot soup.
If you prefer, you can add the frozen peas and carrots before the dumplings, they just won’t be bright green and orange.
The Instant Pot also perfectly cooks the gluten free dumplings, making them soft and tender.
The flavors in this chicken and dumplings are simple, but a steaming bowl will warm your heart and soul.

Since I got my Instant Pot for Mother’s Day, I have been looking for excuses to use it.
One of the first things I made was gluten free pulled pork with green chile slaw.
I made pulled pork braised in a gluten free beer in LESS THAN AN HOUR! This is a game changer for me.
So often I “forget” to get the slow cooker started until it is too late in the day and I don’t have time.
My Instant Pot quickly (or maybe instantly, if that isn’t too “punny”) became my go-to for cooking dinner. One of my favorite things that an Instant Pot can do is sauté.
I know, I know, I have plenty of skillets and a stove top.
I am dying to try some Instant Pot desserts !

Gluten Free Chicken and Dumplings
Easy gluten free chicken and dumplings recipe using an Instant Pot pressure cooker, or made on the stove top. This gluten free chicken soup is simple and easy to make, and is topped with quick gluten free dumplings for the perfect gluten free comfort food soup!
Ingredients
- 1 tablespoon Oil
- ½ cup Diced Onion
- ¼ cup Diced Celery
- ¼ cup Diced Carrots
- 2 pounds Chicken, Breasts, thighs, bone-in or out, your choice
- 2 large Potatoes, Diced, approx 3 cups
- 2 cups Frozen Peas and Carrots, Thawed
For the gluten free dumplings
- 2 cups Gluten Free Flour
- 1 teaspoon Xanthan Gum, Omit if your gluten free flour already has xanthan gum in it
- 1 ½ teaspoons Baking Powder
- ½ teaspoon Salt
- 1 Egg
- ⅔ cup Milk, You can use dairy or dairy-free milk
Instructions
- Set your Instant Pot to “sauté” and sauté the onion, celery, and carrot in the oil until softened.
- Add the chicken, then add water until you reach the 6 cup line.
- Seal and cook on “Poultry” for 35 minutes.
- Once it finishes, let the pressure come down and then open your Instant Pot.
- Remove the chicken and discard any bones. Shred the chicken and put it back in the broth.
- Stir in the diced potatoes and turn your Instant Pot to slow cook while you prepare the dumplings.
- For the gluten free dumplings, whisk together the flour xanthan gum (if your flour doesn’t already have it), baking powder, and salt.
- In a small bowl whisk together the egg and milk.
- Add it to the flour mixture and mix until you have a soft, smooth, but still sticky dough.
- Drop heaping tablespoons of the dumpling mixture onto the chicken soup (I used my 1 ½ tablespoon spring-loaded cookie scoop.) DON’T STIR! Let the dumplings sit on the top and don’t stir them in.
- Seal your Instant Pot pressure cooker again and set it to pressure cook for 12 minutes.
- Let the pressure come down, and then open your Instant pot and stir in the thawed peas and carrots.
Notes
- You can omit the frozen carrots and peas at the end, if desired. You can also use only frozen peas since there are already carrots in your gluten free chicken and dumplings.
- To cut down on the prep time, I like to use frozen mire poux mix, which is frozen diced carrots, onion, and celery. You can use one cup of frozen mire poux instead of the carrots, onion, and celery to cut down on the prep time.
- You can also use "southern style" cube frozen hashbrowns instead of diced potatoes to cut down on the prep time.
- To make on the stove top, simmer the chicken until it is fork tender and shreds easily, 30-45 minutes. Shred the chicken as directed, add it back in, and then scoop the gluten free dumplings on top. Cover and simmer for about 15 minutes, or util the dumplings are cooked through.

Do you know if there some other flour that can be used? one that doesn't contain potato starch?

Hi Missy,
I haven't tested with other flours, but it should work just fine with a potato-free gluten free flour. I recommend making What The Fork's nightshade-free gluten free flour mix. I've used it, and think it would work great in this recipe. You may need to decrease the xanthan gum in the recipe to prevent the dumplings from being gummy. This is because the arrowroot starch is a bit stickier than potato starch.

Absolutely! You'll have to simmer the bones for much longer, at least a few hours, and then when you add the dumplings I would cover and simmer for at least 20 minutes, maybe a little longer.

I made this recipe tonight, and for the most part I liked it. However, when I tried to make the dumplings they didn't come together as the recipe instructed. I use Bob's Red Mill 1 to 1 baking flour. I used the ingredients as stated in the recipe, but when I tried to bring the ingredients together the dough was still very dry and crumbly. I had to add more milk in order for it to come together into a dough consistency. While the end result is very good, the dumplings are very dense and chewy. I was wondering if you could advise an alternative recipe for the flour that I have. Thank you.

I've run into similar issues using Bob's Red Mill 1 to 1 baking flour. The issue is that my gluten free flour blend (that I make using Bob's Red Mill's White Rice, Brown Rice, Tapioca, and Potato starch) absorbs liquid differently. In many recipes where I try using Bob's, I can get similar results if I use LESS of Bob's 1 to 1. The recipe I've tested the most with Bob's 1 to 1 is my gluten free sugar cookie recipe. Instead of the 3 1/4 cups of gluten free flour called for, I use just less than 3 cups of Bob's.
I'd recommend using at least half a cup less gluten free flour, when using Bob's 1 to 1, and then adding more as needed so you get the right consistency. I actually would recommend this for making any gluten free recipe, and using any gluten free flour unless their is a gluten free flour specifically called for. Adding liquid to a too-try dough can make a product that is dense. And you can't take away gluten free flour after you add it.

I haven't tried making this recipe with just egg whites but I think it would work. To get the right texture, you may need two egg whites, or to add an additional tablespoon or two of milk until your batter reaches the right texture.

This is delicious, and easy! I added Better than Bouillon, poultry seasoning, rosemary, thyme, parsley, and turmeric. I love spices and tons of flavor. For the gf dumplings, I loved the technique of scooping the dumplings with a cookie scoop right into the pot. I used a chia seed "egg" and King Arthur's GF flour, cut with a bit of almond and oat flours. I loved that this was all done in one pot, very easy.
